Herbs
Herbs can roughly be divided into two categories: the culinary and the medicinal. Some herbs have uses in both categories.
Growing herbs is generally very easy and having a ready supply close to the kitchen is wonderful, and easily achievable. Quite a lot of the herbs are Mediterranean and like their growing conditions dry and sunny while parsley and mint need regular watering to keep them happy. Identifying which are perennial and which are annuals is important. Coriander is the most popular annual variety which must be replanted each year or even planted in succession throughout the year. Some are only half hardy perennials which will only survive the winter if kept frost free such as Dill and Lemon Verbena. Bay and Rosemary can take a bit of frost but will need protection in the Highlands if the temperature is freezing for days on end. All of them benefit from regular cropping and regular feeding, so some time must be committed to looking after them but they are generally not bothered by pests or diseases and in that respect they are easy to grow.
Most herbs are a very good food source for pollinating insects, especially bees, and the bee’s honey will contain the medicinal properties of the herbs.
